Gujarat is a province located in western India, notably known as the birthplace of Mahatma Gandhi. Gujarat's cuisine is characterized by milder and generous spice blends, with drier dishes unlike other provinces where dishes in sauce are in the majority. Cream and milk are rarely used in the cuisine of this region, so the aromas of the different spices envelop the palate and diffuse a mixture of perfectly balanced flavors.
