Here is the "green" version of our traditional chimichurri mix!
This blend is very fresh, composed only of dehydrated aromatics and salt-pepper.
Like its cousin the red Chimichurri, the spice mix must be rehydrated: 1 dose of chimichurri + 1 dose of vinegar (or lemon) + 2 doses of olive oil.
We advise you to cut a few fresh shallots and spring onions to add some chew to this mixture.
Practical: you can prepare it in advance and keep it for 1 week in the fridge!
We adopted it with steamed potatoes and farmhouse fromage blanc, in "sarasson" mode from our region, in the Loire (or cervelle de canut at our neighbors Lyonnais)
But it is still the traditional sauce to Argentinian steak!
You can also also use it for a dip for falafels, white fish, burgers, grilled vegetables or fries.... almost everything!
Ingredients: Bay leaf, Chilli flakes, Garlic, Onion, Parsley, Oregano, Black pepper, Sea salt
Use: Mix 1 part Chimichurri + 1 part vinegar + 2 parts olive oil
