Mace, we love it and it has become our emblematic spice of Muziris. Macis (mace in English) is the red husk of nutmeg, so they have very similar tastes. However, the mace is much more delicate and delicate on the palate, it brings notes of pine and sweetness. It is used in small quantities, either finely chopped or to infuse directly into your preparations.
Fresh picked mace is intense red and changes color as it dries to rather orange-brown.
