Green Pepper is the true pepper seed of the Piper Nigrum plant, simply picked before it ripens. This is how it is much smoother, but also more "green" in the mouth.
Picked up fresh, green pepper deteriorates very quickly, which is why it is often kept in brine or in vinegar to regain the freshness and crunchiness of this berry. Another method of preservation is to dehydrate it immediately after harvest, in order to retain its color and sweet fragrance.
